A refreshing homemade elderflower cordial with lemon and a hint of apple cider vinegar for natural tanginess.
Ingredients:
20-25 elderflower heads, freshly picked and lightly shaken to remove insects
1 lemon, thinly sliced
800g caster or granulated sugar
1.2 litres water
2 tablespoons apple cider vinegar
Method:
Lightly shake the elderflower heads outdoors or over a clean surface to remove any insects or dirt without rinsing, preserving their scent and flavour.
In a large pot, bring 1.2litres of water to a boil.
Remove from heat and stir in the sugar until fully dissolved.
Add the lemon slices and elderflower heads to the pot.
Pour in the apple cider vinegar and stir gently.
Cover the mixture and let it steep at room temperature for 24 hours.
Strain the liquid through a fine mesh sieve or muslin cloth into a clean container.
Pour the cordial into sterilised bottles and seal.
Store in the refrigerator and dilute with water or sparkling water to serve.
