No-Bake Peanut Butter Energy Bites

Quick and nutritious energy bites packed with peanut butter, oats, seeds, and a touch of chocolate for a wholesome snack.

Ingredients:

  • 120 g peanut butter
  • 70 ml maple syrup
  • 90 g rolled oats
  • 30 g coconut flakes
  • 40 g chocolate chips
  • 15 g ground flaxseed
  • 15 g chia seeds
  • 1 tsp vanilla extract

Method:

  1. In a large bowl, combine peanut butter, maple syrup, and vanilla extract. Stir until smooth.
  2. Add the oats, coconut flakes, ground flaxseed, and chia seeds to the wet mixture. Mix well until fully incorporated.
  3. Fold in the chocolate chips evenly throughout the mixture.
  4. Using your hands or a spoon, form the mixture into small bite-sized balls, about 2.5 cm in diameter.
  5. Place the energy bites on a lined tray and refrigerate for at least 30 minutes to firm up.
  6. Serve chilled or store in an airtight container in the fridge for up to 1 week.
