We hosted our autumn workshop at Violet Kitchen Studios last week. The day started as we foraged for autumnal fruits and vegetables in the beautiful Perthshire countryside – a perfect start to the day. Autumn is a time of harvest and abundance, and there are so many delicious ingredients to be found in nature during this season. With our freshly picked crisp apples and earthy root vegetables, we headed back to the studio where our expert chef for the day, Bethany took us through various cooking demonstrations using our picked fruits and vegetables.
Bethany created some truly delicious dishes for us including a beetroot carpaccio with feta, rocket salad, pistachios and pomegranate molasses dressing; a roast butternut squash risotto with sage, chestnut butter and crispy leeks and an apple and blackberry spelt galette with stem ginger and cardamon custard. We set our autumnal table and gathered round with our log stove burning in the background as we enjoyed delicious food and wine and shared our stories and creative ideas.
